FIELD: food industry.

SUBSTANCE: invention relates to technology for complex processing of vegetables. Method provides for preparation of girasol, its grinding, irrigation with a solution of citric acid, cavitation extraction with nanostructured water at specified parametres of the process with further separation of phases. Further tangential microfiltration of extract is carried out to produce inulin-containing solution and cake. Then cake is exposed to cavitation extraction with nanostructured water at the specified parametres of the process with further separation of phases. The second extract is exposed to tangential microfiltration, concentration and drying to produce pectin. Cake produced after extraction is squeezed and dried to produce food fibre. Produced inulin-containing solution is separated as final product or concentrated and dried to produce inulin, or hydrolysed and concentrated to produce syrup.

EFFECT: method has high efficiency and selectiveness of girasol components separation with high purity of finished products.
