FIELD: food industry.
SUBSTANCE: invention relates to a technology for complex vegetables processing. The method envisages scorzonera preparation, its grinding, cavitation extraction with nanostructured water at specified parameters of the process with subsequent separation of phases, tangential micro filtration to produce inulin-containing solution (which may be separated as the end product, concentrated and dried to produce inulin or hydrolysed and concentrated to produce syrup), repeated cavitations cake extraction with nanostructure water at specified parameters of the process with subsequent separation of phases, tangential micro filtration, concentration and drying of the second extract to produce pectin and pressing and drying the cake produced after repeated extraction to produce food fibres.
EFFECT: method allows to implement complex processing of scorzonera with high efficiency of its components separation and high purity of finished products.
