FIELD: food industry.
SUBSTANCE: invention relates to the food industry, including the baking industry. An unsweet cheese filler composition is described containing: (a) from 25.0 to 45.0% (w/w) processed cheese, (b) from 2 to 8% (w/w) cheese powder; (c) from 2 to 6% (w/w) hydrocolloids; (d) from 0.2 to 3% (w/w) of an acidulant selected from the group consisting of an organic acid selected from lactic acid and/or glucono-delta-lactone and a starter or mixtures thereof; (e) water up to 100%. Also the method of its production, the method of obtaining unsweetened bakery products with its use and its use as a food additive are reflected.
EFFECT: invention provides unsweetened cheese filler compositions with superior texture, flavor, shelf life, and bake and freeze-thaw stability.
