FIELD: food industry.
SUBSTANCE: invention relates to water-free composition for delivery aromatic flavouring substances for a beverage; the composition contains a water-insoluble component for aromatic flavouring substances delivery (in an amount of approximately 1% - 40% of total weight of the water-free composition); a surface-active substance (in an amount of approximately 10% - 40% of total weight of the water-free composition for delivery of aromatic flavouring substances); alcohol (in an amount of approximately 55% - 85% of total weight of the water-free composition for delivery of aromatic flavouring substances); the alcohol to the surface-active substance ratio is approximately 1.375:1 - 8.5:1. Additionally, a method for production of the water-free composition for delivery of aromatic flavouring substances and a method for beverages aromatisation are proposed.
EFFECT: invention allows to produce stable and optically transparent of beverage compositions.
