FIELD: food industry and technology.
SUBSTANCE: method for preparing a stable clear beverage concentrate of a stable beverage concentrate containing water-insoluble solid substances involves dissolving water-soluble substances in a surfactant wherein their weight ratio is from about 1:1 to about 5:1. Except for, water-insoluble solid substances are dissolved preliminary in an anhydrous solution. In preparing a stable syrup for beverage containing water-insoluble solid substances method involves preparing a stable clear concentrate by dissolving water-soluble substances in surfactant followed by addition of aliquot of the indicated concentrate to syrup for beverage. In preparing a stable clear beverage method involves preparing stable syrup followed by its dilution with water, carbonated water or their mixture in the ratio 1:5. Proposed invention provides preparing product retaining stability and clearness.
EFFECT: improved preparing method.
