FIELD: food industry.
SUBSTANCE: invention relates to food industry. The method involves preliminary deformation of a continuously moving dough piece in a direction crosswise to that of the dough movement by way of successive creation of different wave structures in the form of corrugations on the surface of dough and final rolling out until the preset thickness of the dough sheet is achieved; the cross sections of different wave structures are approximately identical. The device includes several freely rotating distributor rollers the outer surfaces whereof are designed in the form of wave-shaped profiles (corrugations) positioned over the transporter upstream relative to the horizontal frame space with a carriage that contains parallel distributor rollers, each roller successively interacting with the surface of continuously moving dough.
EFFECT: invention allows to increase the method efficiency through preliminary deformation of a continuously moving dough piece in a direction crosswise to that of the dough movement by way of successive creation of different wave structures in the form of corrugations on the surface of dough and final rolling out until the preset thickness of the dough sheet is achieved; the cross sections of different wave structures are approximately identical.
