METHOD FOR SPREADING OF DOUGH STRIP AND APPARATUS FOR PERFORMING THE SAME (VERSIONS) Russian patent published in 2006 - IPC A21C3/02 

FIELD: food-processing industry.

SUBSTANCE: method involves moving dough strip between endless conveyors biased by spreading members providing gauging of dough strip thickness, said gauging being performed by acting upon portions restricted in dough strip width; providing spreading of dough strip by means of plurality of rolls made stepped and equipped with gauging portions having diameter exceeding diameter of main part of roll. According to one of versions, front pair of rolls have gauging portions provided in their mid portion, and each subsequent pair of rolls have gauging portions offset to their end edges. According to other version, gauging portions provided on front pair of rolls adjoin one of their ends and are offset on each subsequent pair from said end to opposite end. In both versions, displacement of rolls does not exceed length of gauging portion of previous roll.

EFFECT: increased efficiency by single spreading action of roll upon dough and, consequently, provision for producing thin dough strip tape with retained structure and texture of dough.
