FIELD: food industry.
SUBSTANCE: invention relates to technology of canned compotes manufacturing. Method provides for recipe components preparation, cutting scorzonera, drying it in microwave field as preset process parametres, frying and cryomilling in liquid nitrogen, frying barley grains. Scorzonera and barley grain are mixed in a mass ratio of 7:3. Extraction of the obtained mixture with drinking water at preset process parametres, obtained extract filtering, preparation of a syrup on its basis, packing of cherry-plums and syrup, sealing and sterilisation.
EFFECT: method allows to produce compote with coffee flavour and aroma tones with no coffee content, simplification of technology and reduced content of boiled fruits in end product.
