FIELD: food industry.
SUBSTANCE: invention relates to production technology of canned compotes. Method of production includes preparation of the recipe components, their cutting, drying in microwave field at preset process parametres, dandelion root mincing and frying, barley malt frying. Mixing of dandelion root and barley malt in the mass ratio of 7:3. Extraction of produced mixture with drinking water at specified parametres of the process. Filtering of produced extract, making syrup on its basis, packing of quince and syrup, sealing and sterilisation.
EFFECT: method allows to produce compote with coffee flavour and aroma tones with no coffee content, simplification of technology and reduced content of parts of boiled fruits in end product.
