FIELD: food industry.
SUBSTANCE: method provides for crushing raw material and its enzymatic hydrolysis. The raw material is represented by squid heads. The enzyme preparation used is CelloLux F of Celloviridin V G20x in a quantity of 630±50 amylolytic activity units per 1 kg of raw material, the raw material to Ferment solution ratio being 1:0.25-1:0.75. Hydrolysis proceeds at a temperature of 38-43°C during 4-5 h with subsequent drying at a temperature of 65±5°C.
EFFECT: invention enables production of a functional food product with chondroprotective action of squid wastes.
