FIELD: food industry.
SUBSTANCE: invention relates to the food industry, namely to the production of combined additives based on animal and vegetable raw materials for the enrichment of finished fish products. Functional food additive for fish products contains a Commander squid head hydrolyzate – 55–75 by weight, Jerusalem artichoke tuber flour – 15–25 by weight and soya lecithin – 10–20 by weight.
EFFECT: invention makes it possible to create a functional nutritional supplement with a high biological value, a high protein content, a natural prebiotic – inulin, polyunsaturated fatty acids and antioxidant properties, the introduction of which will increase the quality parameters of the finished fish product, its overall nutritional value, as well as the shelf life.
