FIELD: food industry.
SUBSTANCE: biologically active additive (BAA) represents an enzymatic hydrolyzate from secondary raw materials and/or waste of the initial processing of cephalopods, or sharks, or stingrays, or sturgeon, or salmonids, or gobies, and contains chondroitin sulfate 3-12%, hexosamines 1.5-4.0%, hyaluronic acid 0.15-2%, free amino acids 10-17%, mineral substances 6-11%, protein 40-60% and water 8-10%. The method for producing the BAA includes homogenization of the raw materials, enzymatic hydrolysis using enzyme preparations of Protamex and/or CelloLux-F in the amount of 0.5-2% of the raw material weight with the water duty equal to 1:0.5-1:1.5, subsequent inactivation of the enzymes, purification of the hydrolyzate obtained and drying to the water content of 8-10%.
EFFECT: invention allows to expand the range of BAAs of hondroprotective action and to obtain the finished product with increased biological activity.
