FIELD: food industry.

SUBSTANCE: invention is related to food industry, in particular, to its confectionary branch. For waffle bread preparation one feeds in (at a specific ratio) premium grade wheat flower, sand sugar, culinary salt, baking soda, turmeric powder and Rossiysky confectionary improver. Then one pours in whole cow milk and cold potable water. The ingredients are mixed to produce a homogenous mass in a dough kneading machine; then one pour in melted margarine (of animal fat), chicken eggs or egg yolk. Turmeric powder and Rossiysky confectionary improver are taken at a (1 -1.2):(1 -1.2) ratio, each in a quantity equal to 1.6-1.8% of the weight of flour in dough. The dough mass is baked in a electric waffle maker. Hot waffles are deposited a stable-structured filling on with each product rolled up to produce a tube. The filling is represented by boiled condensed milk or honey cream with ground walnuts or stable-structured confectionary cream.

EFFECT: invention enables production of a waffle tube with maximum storage life and improved quality indices as well as production of regularly shaped products clear structured shape whereof facilitates transportation.
