SUBSTANCE: invention relates to the confectionery industry. The proposed wafer candy is a body made of a wafer shell, in the form of a hollow volumetric geometric figure, formed from two pairwise connected blanks made with a flat base and with a cream filling placed inside the body. At the same time, the recipe composition of the wafer casing contains wheat flour, corn starch, food salt, baking soda, lecithin, coconut oil, egg powder, the enzyme "Alfamalt LQ 4020" and water. The recipe for the filling contains a semi-finished product of praline mass, confectionery fat "Econat 3004-32", lecithin, flavoring "Cream", antioxidant "Nova Sol Sof". At the same time, the semi-finished product of praline mass contains wafer sheets, sugar, lactose, confectionery fat "Econat 3004", dry milk whey, vanillin, roasted grated peanut kernel. The body contains a coating of milk confectionery glaze sprinkled with a mixture of peanut nibs and crackers in a 1:1 ratio. In this case, the body, milk confectionery glaze and sprinkles from a mixture of peanut grains and cracker crumbs are in the following ratio, wt.%: milk confectionery glaze - 39.00 - 41.00; a mixture of peanut nibs and crackers - 5.00 - 6.00; body - the rest.
EFFECT: invention is aimed at improving the organoleptic properties in terms of taste, increasing the shelf life while maintaining the crunchy properties of the wafer shell, melting delicate texture of the filling, without traces of delamination of wafer sheets and filling.
