FIELD: medicine.
SUBSTANCE: invention represents a PS4-version polypeptide produced of an initial polypeptide of a nonmaltogenic exoamylase activity which is identical at least by 60 % to any of SEQ ID NO:1-14, and the PS4-version polypeptide contains an amino acid mutation in one or more positions chosen from a group consisting of: 146, 229, 303, 306, 309, 316, 353, 26, 145, 339 by numbering of Pseudomonas saccharophilia exoamylase sequence positions presented as SEQ ID NO: l. Also, the invention concerns the application of said polypeptide in food industry.
EFFECT: extended range of nonmaltogenic exoamylases used in food industry.
