SUBSTANCE: invention relates to the manufacturing technique of coffee substitutes. The method implies preparation of the recipe components, extraction of cocoa husks by liquid nitrogen with the respective miscella separation, girasol-sunflower cutting, drying in the microwave field at preset process parametres and frying, frying barley grains, acorns, fruit stone kernels, mixing of girasol-sunflower, barley grains, acorns and fruit stone kernels, impregnation of the obtained mixture by the separated miscella with the simultaneous pressure boost and following reduction of pressure down to the atmospheric one along with simultaneous freezing of the mixture and its cryogrinding in the released nitrogen medium.
EFFECT: method allows to produce new coffee beverage of non-traditional raw materials according to a nonwaste technology.
