FIELD: food industry.
SUBSTANCE: recipe components are prepared. Cocoa husks are extracted by liquid nitrogen to separate according miscella. One performs cutting oyster plant, its drying in microwave field at preset process parametres and frying. Barley grains, acorns and fruit stone kernels are fried. Oyster plant, barley grains, acorns and fruit stone kernels are mixed. The produced mixture is impregnated with the separated miscella with simultaneous increase of pressure up to a value that corresponds to pressure of saturated nitrogen vapours at the temperature of impregnation. Pressure is reduced down to atmospheric one with simultaneous freezing of mix. It is cryomilled in medium of evolved nitrogen.
EFFECT: method makes it possible to produce new coffee drink from non-traditional raw materials.
