FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular to confectionary industry. The confectionary product contains a polymeric system, a flavouring agent and a sweetener. At least 20 wt % of the said confectionary product contains an essentially non-elastomeric polymer. Less than nearly 5 wt % of the said confectionary product contains one elastomeric polymer or a combination of several ones. The polymeric system of the said confectionary product contains at least 95 wt % of polyvinyl acetate. The said confectionary product is characterised by tangent (delta) being more than 1, measured at a nearly 1 Hz frequency wherein tangent (delta) is determined from the formula: loss modulus G"/dynamic elasticity modulus G'.
EFFECT: invention allows to produce a new confectionary product with texture characteristics similar to those of soft toffee but including a part which is preserved in the mouth during mastication.
