FIELD: food industry.
SUBSTANCE: invention relates to meat industry and may be used for production of mince for raw smoked, semi-smoked, cooked, and cooked-smoked sausages, frankfurters, meat pastes etc. The method envisages mince preparation, introduction of a vegetable additive, spices and water and thermal treatment. The vegetable additive used is peeled pumpkin seed powder with milled particles size 0.1-0.5 mm. Peeled pumpkin seed powder is added in an amount of 3-9% of mince weight.
EFFECT: invention enables production of a functional food product simultaneously balanced in terms of amino acid, fatty acid and mineral composition, capable to recover food status with a number of physiologically valuable functional ingredients and possessing, at the same time, high organoleptic properties.
