FIELD: food industry.
SUBSTANCE: invention relates to food industry. The method provides for preparation of algae, their washing, extraction and filtration. In the course of preparation algae are soaked in a solution with pH 2-6.9 at a ratio of 1:30 - 1:50 accordingly and maintained during 0.25-3 h at the mixture temperature 5-30°C. Then the solution is drained and the algae are washed with water until the medium pH is 7. Then one performs the algae extraction, water duty being 1:30 - 1:50 accordingly with addition of solution of an alkali or an acid or a buffer for the medium pH to be 5-12. Extraction proceeds at a temperature of 97-132° during 1-4 hours; after filtration the extract is purified and dehydrated to produce agar.
EFFECT: invention allows to increase agar yield to 95%.
