A method for producing a gel-forming polysaccharide agar from red algae is proposed, including the preparation of algae, pretreatment, extraction, purification of extracts, their dehydration and drying. Algae Ahnfeltia tobuchiensis, Ahnfeltia plicata or Gracilaria verrucosa are used as raw materials, which are washed and soaked in water during the preparation of raw materials. Then, the algae are treated with an enzyme preparation having endo-1,4-β-glucanase activity, and then the raw material is soaked in an alkali solution or, after preparing the raw material, it is soaked in an alkali solution, and the raw material is treated with an enzyme preparation after the first extraction of the polysaccharide. Moreover, the extraction of agar from the algae Ahnfeltia tobuchiensis is carried out three times, and from the algae Ahnfeltia plicata or Gracilaria verrucosa - twice. Before the last extraction, the algae are pressed, the resulting extracts are purified, dehydrated and dried to obtain an agar.
