FIELD: food industry.
SUBSTANCE: invention relates to food industry. The raw material is represented by freshly procured Kappaphycus algae that, in the process of preparation, are washed, milled into 1.5-2.0 mm particles and frozen at a temperature of minus 20°C. Pigments extraction is performed in two stages in distilled water at a ratio of water to algae equal to 1:5 during 3 hours; upon completion the solution is decanted while the sediment is delivered for the second pigment extraction stage under the same conditions. The produced solutions are mixed and centrifugated at 9000 rpm during 30 minutes. Carrageenan extraction is performed from the algal residue produced after the pigment extraction with distilled water at a ratio of water to algal residue equal to 3:1-7:1 respectively at a temperature of 80-95°C during 1-4 hours with subsequent introduction of 20% potassium chloride solution. Before drying the carrageenan gel is frozen at a temperature of minus 18-22°C during 24 hours.
EFFECT: invention allows to produce a high-molecular carrageenan as well as to increase the yield of phycobilin pigments and low-molecular carrageenan into the extract.
