FIELD: food industry.
SUBSTANCE: invention relates to food industry. The aerated water-continuous oil-in-water emulsion with overrun 10-500% contains: 5-90 wt % of oil phase; 10-95 wt % of water phase; 0.3-30 wt % of water phase of granules of one or more egg yolk proteins chosen from high density lipoprotein and phosvitin and from 0.05 to 10 wt % of water phase of one or more egg yolk plasma proteins chosen from low density lipoprotein and livetin. The weigh ratio of the egg yolk protein granules to the egg yolk plasma proteins exceeds 2:1.
EFFECT: proposed emulsion is stable during long-term storage.
