The topping composition based on sponge cake includes prime grade wheat flour, sugar sand, melange, essence, potato starch, activated powdered chalk at the following ingredients ratio, wt %: prime grade wheat flour - 21.58-21.37; activated powdered chalk - 0.43-0.54; potato starch - 5.42; melange -45.32; essence - 0.0007; sugar sand- balance.
EFFECT: invention allows to enrich the topping composition with biologically available iodine and calcium as well as to enhance the topping crumbiness.
