FIELD: agriculture.
SUBSTANCE: classification of beef into groups DFD and NOR is performed by determining the difference in values between the positive and negative potential in BAP Tan-Fu. If the difference of potentials is less than 5 microamps - it is the beef NOR; if it is 5 microamps and more - it is meat DFD. When the difference between positive and negative potentials is less than 5 microamps, the meat is classified as NOR, with more than 5 microamps it is classified as meat DFD.
EFFECT: method enables to assess quickly, easily and reliably the quality of beef during the lifetime of slaughter animals.
