SUBSTANCE: invention relates to the meat industry and is aimed at determining the technological suitability of meat raw materials for the production of meat products, in particular, to a method for assessing the quality of pork. The method includes sampling and making histological sections from the middle part of the muscle m. Longissimum dorsi along an imaginary line through the center of the muscle parallel to the spine. From the samples, transverse histological sections are made, in the amount of at least two hundred muscle fibers, then the diameters of the muscle fibers are measured, the average diameter of the muscle fibers is determined, after that, muscle fibers are separately counted, having deviations to the smaller and larger side of the average diameter by more than 1/3 of the average diameter of the muscle fibers, while if the proportion of muscle fibers of the smallest and largest diameters in the total number of fibers is not more than 7% , inclusive, then pork of normal quality, suitable for all areas of processing; if the proportion of muscle fibers of the smallest and largest diameters in the total number of fibers is from 8 to 20%, inclusive, then pork is limitedly suitable for the production of meat products, it is not recommended for the production of large-sized semi-finished products; if the proportion of muscle fibers of the smallest and largest diameters in the total number of fibers is 21% or more, then pork is not suitable for the manufacture of lumpy semi-finished products, it is recommended for the production of beef and pork sausages.

EFFECT: determination of the presence and severity of myopathic changes in the muscle fibers of the studied raw material is provided.
