FIELD: food industry.
SUBSTANCE: water-free solubilisate of a preserving agent contains an aliphatic and/or an aromatic acids (such as sorbic and/or benzoic acid) and one or more emulsifiers with indices of hydrophilic-lipophilic balance (HLB) equal to 9 - 18 and an emulsifier in an amount from nearly 50 to nearly 95 wt % of the solubilisate total quantity. The emulsifier may be represented by a polysorbate, in particular, by Polysorbate 20 or Polysorbate 80. The solubilisate may contain a wetting agent and wax. The wetting agent contains nearly 5 wt % of oil including predominantly medium-chain triglycerides. The method envisages heating the emulsifier with HLB index equal to 9-18 till temperature is from nearly 70 to nearly 90°C and gradual introduction (while stirring) of an aliphatic and/or an aromatic acids into the hot emulsifier. After complete introduction of the acid the mixture is heated (continuously stirred) up to a temperature of 83 - 90°C, homogenated and then cooled. The solubilisate is applied as a preserving additive for food products as well as for preservation of the surface of wood or polymeric materials or medical apparatus.
EFFECT: invention ensures enhanced protection of food products against microorganisms affection because acid in the solubilisate is present in the form of miscella so than the acid released from miscella can impact immediately on microorganisms killing them when miscellae dehisce while contact cell membranes or similar biological material.
