SUBSTANCE: invention relates to natural vegetable preserves production technology. The method envisages preparation of recipe components, scorzonera cutting, blanching in water solution of culinary salt and citric acid and cooling, preparation of filling in the form of water solution of sugar, culinary salt, citric acid and ascorbic acid, packing scorzonera and filling, sealing and sterilisation.
EFFECT: invention allows to ensure the possibility of production of natural preserves with pleasant organoleptic properties of non-traditional raw material.
