FIELD: food industry.
SUBSTANCE: invention relates to dairy industry. The method for production of a symbiotic cultured milk product involves production of soya milk by the method of extraction of water-soluble substances from prepared and milled dry soya seeds, suspension separation by centrifugal method, soya milk sterilisation. The produced soya milk and cow milk are standardised; salt, sugar, dry defatted milk are introduced; the mixture is pasteurised, homogenated, cooled to a fermentation temperature; starters containing Lactobacillus acidophilus BZ-AV in an amount of 2.5-3% of the mixture volume and kefir fungi in an amount of 2-5% of the mixture volume are introduced into the mixture that is fermented till acidity is equal to 70-100°T.
EFFECT: invention allows to produce a product with enhanced organoleptic, microbiological and structural-mechanical indices and with high nutritive and biological value.
