FIELD: food industry.
SUBSTANCE: invention relates to food industry. One extracts protein substances of soya seeds to produce soya protein base. Tomato-and-carrot paste is prepared by way of preliminary combined salting of tomatoes and carrots at the components ratio being 4:1. The product is milled into paste-like condition and homogenised. One introduces the tomato-and carrot paste into the base at a ratio of the soya protein base to the tomato-and carrot paste equal to 10:1. The protein clot is separated from whey. The protein clot is moulded in the form of coloured protein-and-vitamin granules and dried till moisture content is equal to 8-10% by way of active ventilation at the air flow temperature amounting to 70-80°C.
EFFECT: invention allows to produce a product with a significant content of lactic acid, a biologically active vitamin-and-mineral complex and high antioxidant ability.
