FIELD: food industry.
SUBSTANCE: present invention relates to food industry. According to the proposed method, food product slices are blanched and subjected to dehydration in a non-oily medium at controlled rates to imitate the preset profile of fried product dehydration. The said slices are dehydrated using microwaves till moisture content is less than 20%, dehydration proceeding at the first and the second rates that are not identical. Additionally, one proposes a food product slice obtained by the said method. The proposed group of inventions allows to produce a food product with low fat content to be used as a light snack.
