FIELD: food industry.
SUBSTANCE: invention relates to food industry. The extrudates production method involves grains purification, extrusion and extrudate milling. The materials treated are represented by grains of wheat, rye, barley, oat, rice, buckwheat, millet, maize, soya (with moisture weight content equal to 12…18%) separately or in a mixture without preliminary surface peeling Whole grains are extruded during 15…25 sec at a temperature of 110…140°C with subsequent impact of reduced pressure equal to 0.03…0.07 MPa on the raw material released from the extruder matrix draw dies; moisture content in the extruded product is regulated by the amount of vacuum at the extruder outlet at a level no more than 8%. During releasing from the matrix draw dies the extrudate is cut into particles sized 1.0…4.0 mm.
EFFECT: invention allows to reduce the production period, decrease prime cost, enhance technological properties.
