FIELD: food industry.
SUBSTANCE: invention relates to the food industry. Method for production of cereal crispins includes cleaning of rye grain, moistening to weight fraction of moisture from 14.5 to 15.5 %, retention during 30 to 35 minutes, extrusion in hot extrusion mode, milling to particle size of 1.5 to 1.6 mm, wetting to moisture content of moisture of 16.5 to 17 %, retention for 30 to 35 minutes, hot extrusion treatment, cutting and cooling.
EFFECT: invention allows to perform deep processing of grain raw material with bringing it to the state ready for consumption by using two-stage grain extrusion, which increases storage life, increases water-soluble substances and product nutritional value.
