FIELD: food industry.
SUBSTANCE: invention is related to dairy industry. The method for production of fermented milk product enriched with selenium envisages milk normalisation, purification, homogenisation, pasteurisation, cooling to the fermentation temperature, introduction of Propionibacterium shermanii dry starter and a selenium-containing biologically active additive in an amount of 0.005-0.0051 litre per 100 kg of the ready product; the said additive is produced by way of propionate bacteria cultivation in a nutritive medium based on curd whey containing sodium selenite in an amount of 0.9-1.1 g/litre, ripening, cooling, clot stirring, cooling and bottling.
EFFECT: invention allows to improve rheological properties and extend the product storage life.
