FIELD: food industry.
SUBSTANCE: invention relates to food industry. One places berries milled into 5-10 mm sized particles in one layer inside a vacuum chamber and actuates the drying process. At the first drying stage residual pressure in the chamber is equal to (8-12) kPa, the drying temperature is equal to (60-65)°C. At the second drying stage pressure in the chamber is reduced to (3-4) kPa while the temperature is increased up to (70-80)°C.
EFFECT: method will allow to create a technology for production of various kinds of dry berries having high quality properties along with reduced duration of the drying process and low energy costs.
