FIELD: food industry.
SUBSTANCE: invention relates to food industry. Described is a method of producing cranberry pomace powder, comprising the steps of pomace drying, grinding to obtain powdered particles, sieving and packaging into vacuum bags, wherein drying is carried out in vacuum oscillating mode by alternating pressure release from 20–30 kPa to 1.7–2.3 kPa and convective heating of raw material from energy of condensation of vapours released during drying with collection of condensate for further use.
EFFECT: method enables to reduce the duration of the process, reduce power consumption and preserve biologically active substances in the product.
