FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular, to dried fish production method. In method fish before drying is cut into plates with thickness of 1–2 cm and is laid on tray of drying chamber. Then drying process is started with application of variable residual pressure. Infrared lamps are used as heat source. Heating temperature of the product throughout the drying process does not exceed 45 °C. Heat flow density makes 4–6 kW/m2. Drying is carried out in conditions of pressure change from 1 to 20 kPa with period of 15 minutes.
EFFECT: invention allows to reduce energy consumption for fish drying with preservation of its quality and short duration of the process.
