SUBSTANCE: invention may be used in the technology of fish-and-vegetable preserves production. The method for production of preserves "Fried scad with vegetable garnish in tomato sauce" involves recipe components preparation. At first one performs cutting, sauteing in vegetable oil and milling part of bulb onions, sunflower flour pouring with drinking water and maintenance for swelling, the listed components mixing with tomato paste, drinking water, sugar, black hot pepper, allspice, cloves, coriander and laurel leaf, the mixture cooking and addition of acetic acid to produce a sauce. Then one performs cutting and sauteing in vegetable oil carrots and the remaining bulb onions, brined cucumbers cutting and the listed components mixing to produce garnish. The scad is cut, maintained in salt solution, mealed in wheat flour and fried in vegetable oil. Then the scad, garnish and sauce are packed, sealed and sterilised.
EFFECT: invention allows to reduce the manufactured target product adhesion to container walls.
