FIELD: food industry.
SUBSTANCE: invention is related to food industry and may be used during production of pasta of bread-baking flour. The dough composition for pasta production includes bread-baking wheat flour and water. Additionally the composition contains EMCEdur F flour improver in an amount of 0.1-0.5% of the flour weight or Pastazym flour improver in an amount of 0.01-0.03% of the flour weight.
EFFECT: invention allows to produce pasta with high quality properties with the base raw material used represented by bread-baking wheat flour.
