FIELD: physics.
SUBSTANCE: when realising the method, direct current is passed through the sample and space-charge polarisation voltage of the meat sample is determined. Low-pass signal filtration is carried out. The maximum and steady-state values of the filtered signal are calculated and the injection level is estimated based on the obtained results using a corresponding formula. The apparatus for estimating the injection level of meat consists of a primary transducer which includes a device for holding the sample, a measuring circuit consisting of a resistor and two measuring electrodes connected to an analogue-to-digital converter (ADC) which is connected to a microcomputer which is connected to memory, a keyboard, a display and the control input of a switch, the second input of which is connected to a direct current source and the output is connected to the measuring circuit.
EFFECT: high objectivity and reliability, easy estimation.
