FIELD: physics.

SUBSTANCE: sample is exposed to intermittent electric field and polarisation potential of the meat sample and electrodes is determined. Polarisation potential of the electrodes is subtracted from the polarisation potential of the sample. Low-pass filtration and numerical differentiation of the difference signal is performed. Amplitude-frequency characteristics of the difference signal, the filtered and differentiated difference signals are calculated, while performing Fourier transformation. Average values of the amplitude-frequency characteristics of the difference signal and the spectrum of the difference signal, the maximum and the minimum value of the amplitude-frequency characteristics of the filtered and differentiated difference signals are calculated and the water holding capacity is calculated based on the obtained results using the corresponding formula. The device for estimating water holding capacity has a primary transducer having a device for holding the sample, two power electrodes and two measuring electrodes connected to a matching amplifier. The latter is connected to an analogue-to-digital converter, as well as a computer and the control input of a switch, the input of which is connected to a pulse generator, and the output is connected to a voltage sensor and power electrodes.
