FIELD: measurement equipment.
SUBSTANCE: invention relates to food industry. The method is realised as follows: a sample of 5.0 g of honey is taken, dissolved in 100 cm3 of deionised water, and the sample is introduced into a chromatographic column REZEX RCM 300×7.8 mm, designed for detection of monosaccharides content. The sample is eliminated by water with speed of 0.6 cm3/min at the temperature of 60-80°C, yield is detected, and mass fraction of hydrocarbons is defined in a refractometric manner by areas of chromatographic peaks. Chromatographing is repeated at least six times for each sample. Results are processed statistically using a standard methodology. Using the produced results, the total mass fraction of fructose and glucose is calculated, as well as their ratio. Further availability of falsification is established on the basis of the following criteria: total content of glucose and fructose exceeds the range of 57-79 wt % and/or the ratio of fructose and glucose mass exceeds the range of 1.05- 1.73.
EFFECT: invention provides for higher reproducibility and validity of detecting various types of natural honey falsification compared to available methods of falsification detection, which are efficient only for its private cases.
