FIELD: food industry.
SUBSTANCE: invention relates to preservation industry, in particular, to the methods for sterilisation of peach compote (with kernels) in jar SKO 1-82-500. The method involves sealing the jars filled with fruits, putting into the carrier ensuring mechanical air-tightness of the jars. Then the jars filled with fruits are sequentially heated in a 130°C air flow at a rate of 3.5-4 m/s during 11 minutes with subsequent heating in a bath with 100°C hot water during 15 minutes. Then one performs subsequent cooling of the jars in an atmospheric air flow at a rate of 7-8 m/s during 15 minutes. During the heat treatment process in the heated and the atmospheric air flows the jars are turned upside down with a frequency equal to 0.133 s-1.
EFFECT: invention ensures the ready product quality enhancement, the process duration reduction, prevention of thermal breakage of jars combined with simultaneous simplification of the apparatus design.
