FIELD: food industry.
SUBSTANCE: method for production of peach compote with kernels is as follows: jars with compote are put into the carrier ensuring prevention of stripping in the process of heat treatment; then one performs preliminary heating of jars with the product with 140°C air during 3 minutes, heating in 80°C hot water during 5 minutes with subsequent repeated heating with 160°C hot air during 3 minutes. Then one performs sterilisation in 100°C hot water during 15 minutes with subsequent cooling in an atmospheric air flow at a rate of 6-7 m/s during 15 minutes. During the whole process of heat treatment the jar is turned upside down with a frequency equal to 0.133 s-1.
EFFECT: method implementation process duration reduction, preservation of biologically active components of raw materials used and improvement of structural-and-mechanical characteristics of the ready product, prevention of jars thermal breakage in the process of heat treatment.
