FIELD: food industry.
SUBSTANCE: invention relates to the technology for production of fish-and-vegetable preserves. The method envisages recipe components preparation, carrots, bulb onions and white vegetables cutting and sauteing in vegetable oil, parsley green milling, sunflower flour pouring with drinking water and maintenance for swelling. One mixes the listed components with tomato paste, drinking water, sugar, black hot pepper, allspice and laurel leaf with the mixture cooking and addition of acetic acid to produce a sauce. Gobies are maintained in salt solution, mealed in wheat flour and fried in vegetable oil; the gobies and the sauce are packed, sealed and sterilised.
EFFECT: method allows to reduce the manufactured target product adhesion to container walls.
