FIELD: food industry.
SUBSTANCE: invention relates to the technology for production of fish-and-vegetable preserves. One prepares recipe components, cuts and sauteed in vegetable oil bulb onions, chops carrots and mixes the listed components. One proceeds with sunflower flour pouring with drinking water and maintenance for swelling, the flour mixing with tomato paste, drinking water, sugar, black hot pepper, allspice, cloves, cinnamon and laurel leaf. One cooks the mixture and adds acetic acid to produce marinade. Smelt is cut, maintained in salt solution, mealed in wheat flour and fried in vegetable oil. Then the smelt, vegetable mixture and marinade are packaged into containers, sealed and sterilised.
EFFECT: invention allows to reduce the manufactured target product adhesion to container walls.
