FIELD: food industry.
SUBSTANCE: invention relates to food industry. The method envisages introduction of a grain component into the product or semi-product composition, such component manufactured by way of soaking grains of one or several cereal crops with subsequent milling of swollen grains. Swollen grains milling is performed in such a way that the temperature of the mass released from chopper does not exceed 60°C. Grains soaking is performed at a temperature of no more than 45°C till a swelling stage whereat a pressing force equal to 0.15-11.0 kgf leads to plastic deformation of no less than 80% of caryopsis.
EFFECT: invention allows to ensure technological control convenience, apply scientifically grounded technological process modes, obtain stable quality of the products with enhanced biological value of the end product.
