FIELD: chemistry.
SUBSTANCE: culture medium is prepared, acetic acid bacteria immobilised on a support are cultured and culture medium products are oxidised into acetic acid during aeration with air. The support used is an alumino-adsorbent or zeolite with the possibility of reducing oxygen supply by preliminary blowing of the prepared culture medium with air for one day before adding bacteria or blowing a day after one or after two days during the process of culturing and oxidation with air flow rate during blowing of 9 m3/h per 1 m3. 3 mM/l of hydrogen peroxide can be added once to the culture medium at the beginning of culturing, or 1 mM/l of hydrogen peroxide can be added daily to the culture medium. The medium can be shaken in a shaker with amplitude of 3 and rate of 200 rpm. The obtained vinegar solution is collected and pasteurised. If cereal wort is used to prepare the culture medium, it is clarified and purified with zeolite or an alumino-adsorbent in amount of 0.5-2.5 g/l. EFFECT: improved taste qualities of vinegar, shorter production cycle, reduced air consumption, power consumption of the process and expenses, reuse of the support and clarifier while providing regeneration thereof is enabled by the use of the alumino-adsorbent or zeolite to clarify and purify both the ready vinegar and semi-finished products for preparing the culture medium, as well as a support for acetic acid bacteria.
