FIELD: food industry.
SUBSTANCE: invention relates to the field of food industry. The method involves bread packaging into specified packing vessels, aseptic treatment with an ozone and air mixture, vacuum treatment and sealing. Aseptic treatment is performed by way of subjecting bread to the impact of an aero-ionised ozone and air mixture prepared based on preliminarily cleaned filtered air. The ozone and air mixture treatment is performed in the following modes: voltage supplied to the high voltage electrodes of the aeroioniser - 32 kV, air ions concentration - 2×105 cm-3.
EFFECT: invention allows to increase bread bakery products storage life with preservation of the products quality without chemical preserving agents usage.
