FIELD: food industry.
SUBSTANCE: invention relates to preservation industry, in particular, to a method for sterilisation of tangerine compote in jars SKO 1 -82-350. The method involves sealing the jars filled with compote, putting the jars into the carrier ensuring mechanical air-tightness, subsequent three-stage heating of compote in 60, 80 and 100°C water for 5, 5 and 8-10 minutes respectively with subsequent two-stage cooling with 80 and 60°C water during 5 and 5 minutes respectively, with subsequent cooling with 40°C water during 5 minutes; heating and cooling are performed at a water temperature equal to 60 and 80°C in the same baths; during the heat treatment process the jar is turned upside down with a frequency equal to 0.12 s-1.
EFFECT: invention ensures the sterilisation process duration reduction and simplification, promotes preservation of biologically active components of raw materials used, boiled and cracked fruits quantity reduction thus enhancing the ready product quality.
